The cultivation of olive trees is alternating with the vineyards, on two hills facing east towards the Val di Pesa. The twelve hectares of olive groves are cultivated with different species of Tuscan olive trees: Morellino, Frantoiano, Pendolino and Leccino.
The trimming of the trees is done during April and May. The olive trees blossom between May and June and the olives have a long maturation. The picking in Tuscany is done from the end of October to the beginning of December, the fruits are hand thrown on a net placed at the basis of the tree.
The olives picked at Il Borghetto are pressed by the oil mill Cooperativa di Greve Pesa and the oil is bottled directly by the Azienda.
Every year the production of extra virgin olive oil amounts to 2000 to 3000 kilograms. The freshly pressed oil has a brilliant yellow-greenish colour with a slightly pungent aroma and an soft fragrance of artichoke.
It is possible to partecipate to the olive harvest from "the picking to the bottle", between the end of October to the end of November to Make your own Extra Virgin Olive Oil.
