EXTRA VERGINE OLIVE OIL

The cultivation of olive trees is placed on different blocks alternating with the vineyards, on two hills facing east towards the Val di Pesa. Every block has a different exposure, for the most part facing south-east. The olive groves are cultivated with different species of Tuscan olive trees: Morellino, Frantoiano, Pendolino and Leccino.
The trimming of the trees is done during April and May.
The olive trees blossom between May and June and the olives have a long maturation.
The picking in Tuscany is done from the end of October to the beginning of December. It’s a long procedure also for small allotments: the fruits are hand thrown on a net or a parachute placed at the basis of the tree. If the plot of land is too rough the olives are hand picked and collected in small baskets.
The olives picked at Il Borghetto are pressed by the oil mill Cooperativa di Greve Pesa and the oil is bottled directly by the Azienda.
Every year the production of extra virgin olive oil amounts to 2000 to 3000 kilograms (depending on the harvest).

The freshly pressed oil has a brilliant yellow-greenish colour with a slightly pungent aroma and an soft fragrance of artichoke. With the passing of the months it becomes more and more transparent, it looses the strong yellow-greenish colour and its taste becomes more delicate, but it maintains its full substance and intense fragrance.
